Meat Culture CHR Hansen Bactoferm T-SPX

  • A mixed meat culture for production of fermented meat products like Italian Salami.
  • Temperature range 18-24°.
  • Culture Composition: Pediococcus Pentosaceus, Staphylococcus Xylosus.

Meat Culture CHR Hansen Bactoferm Mold-600

  • Produces a white/light greyish appearance on the surface of moulded dried sausages as well as a mushroom flavour and aroma.
  • Mold-600 is fast growing and produces a dense, short white surface coverage with an even appearance.
  • It provides good ability to control the surface flora and suppress the growth of undesirable organisms such as indigenous moulds, yeasts and bacteria.
  • Culture Composition: Penicillium Nalgiovense.
Cures

No.1 Curing Salt

  • Used to cure all preserved meats that require cooking or smoking – including poultry, fish, ham, jerky, bacon and corned beef
  • Contents: 6.25% Sodium Nitrite (NaNO2) in a sodium Chloride (table salt, NaCl) base.
  • NOT TO BE USED for cold smoked or air-cured meats.
  • In order to ensure safe consumption, cured meat must be heated to a minimum temperature of 65°C. Not following the recommended dosage and use guidelines may lead to adverse health effects.
  • Available in 100g and 500g packets.
  • Dosage rates as per packet must be strictly adhered to

No.2 Curing Salt

  • Used for dry-cured products, which do not require cooking, smoking or refrigeration – prosciutto and dry-cured salami.
  • Contents: 6.25% Sodium Nitrite (NaNO2) and 4% Sodium Nitrate (NaNO3) in a sodium chloride (table salt, NaCl) base.
  • NOT TO BE USED for products cooked/fried at high temperatures. A combination of sodium nitrite and sodium nitrate in cured bacon has been found to produce nitrosamines (cancer-producing compounds) when cooked at high temperatures. Not following the recommended dosage and use guidelines provided may lead to adverse health effects.
